You might be familiar with Hasselback potatoes, and many of you have probably already tried them.
The original recipe contains sliced potatoes, but not all the way through, and the spaces between the cuts are filled with cheese, butter, spices, and various other foods.
However, this recipe does not need to be limited to potatoes only. For instance, you can cook chicken in this way, and you can stuff it with all sorts of foods.
The following recipe will help you prepare an extremely delicious, cheesy stuffed dinner.
Ingredients:
- 1-pound chicken breasts
- ¼ cup cottage cheese – 2
- 1¬½ cups fresh baby spinach
- 1 teaspoon olive oil
- Paprika
- Salt
- Pepper
Method of preparation:
Turn on the oven at 400 degrees Fahrenheit (200 degrees Celsius or Gas Mark 6). Then, add the olive oil in a sauté pan, add the spinach, and cook it for 3 to 5 minutes. Then, stir in the cottage cheese, cook it for a minute, and then leave it aside to cool.
Next, cut the chicken breasts into slices, 1 centimeter (0.39 inches) apart and about 75% of the way through the chicken. Add the mixture of ricotta and spinach into the cuts.
Season with salt and pepper, and sprinkle with some red paprika on the top, for an enhanced flavor and color. Bake in the oven for 20-25 minutes until the juices are clear and the cheese is completely melted.
