Ingredients

  • 2 large ripe bananas
  • 2 eggs
  • 1 cup raspberries
  • 1 cup desiccated coconut
  • 3 tablespoons maple syrup
  • 1/3 cup Almond Butter
  • 1 teaspoon baking powder
  • 1/4 teaspoon sea salt

Instructions:

Pre-heat the oven to 180C, and in a bowl, mash the bananas and add the almond butter. Then, add the rest of the ingredients, mix, and fold in the berries.

Line each hole of the muffin tray with baking paper, spoon the mixture in the holes and cook for 35 minutes, until the muffins turn golden.

Then, take them out of the oven, let them cool a bit, and serve with coconut or natural yogurt.
